You will need (Serves 6-7):
- A bottle of your favourite champagne (it needn't be the most expensive, but a dry champagne works best)
- 500ml pomegranate juice - fresh squeezed if possible
- 6-7 sprigs of rosemary
- 1 punnet raspberries
Keep your ingredients on hand, but only prepare the champagne cocktail when you are ready to serve immediately – chilled, bubbly and fresh is best, so keep the bottle(s) in the fridge while you prep.
Remove the majority of the rosemary leaves from the sprig, leaving several at the top. Prepare the rosemary garnish by sliding whole raspberries onto the bare sprigs until the berries meet the remaining leaves. You can prepare these in advance and refrigerate them, if you are making champagne cocktails for a large group.
Pour a tablespoon of pomegranate juice into each champagne glass, and top with champagne. Sample the mix and add more juice to suit to your taste.
Place a raspberry-laden rosemary sprig into each champagne cocktail. The garnish is ideal for stirring, and makes for a delicious sweet treat. Cheers to 2016!
