Despite rice being a fixture in many diets, it is often overlooked when it comes to planning dessert. Many cultures around the world have their own take on sweetening up this staple, but we’ve decided to keep things simple with this recipe, giving you a great base for a delicious side dish or unique dessert which you can customise according to personal taste.
Ingredients (serves four)
- 120 gm short grain white rice
- 400 ml coconut milk
- 200 ml water
- 30 gm sugar
- A pinch of salt
- Mixed fruits of your choice
Mix the coconut milk and water together in a pot before adding the rice to this liquid mixture. Slowly stir in the sugar and a pinch of salt to temper the sweetness.
Boil the rice for 30 minutes or until cooked. Once the rice is ready, use an ice cream scoop or large spoon to pick up the rice and place it in the bowl.
Place two to three scoops of rice into the bowl and allow it to cool slightly while you cut the fruit into small pieces.
Mix the chopped fruit together or present the assorted types in individual bowls so your guests can choose for themselves. Place the fruits on top of the rice immediately before serving so that the rice does not become soggy from the fruit juice. Bon appétit!
