What are you doing New Year’s Eve? For those of you contemplating a night in, let our three-course menu (complete with cocktail) inspire your best New Year dinner party yet. As a starter, these goat’s cheese potato chips bring colour and flavour to the table, ensuring your guests’ satisfaction as they await the main course.
You will need:
1 kilogram blue potatoes, cut into thin slices
Vegetable oil cooking spray
3 tablespoons olive oil
Coarse sea salt
Freshly ground pepper
1 teaspoon dried oregano
1 cup creamy, quality goat’s cheese
1 teaspoon honey Dijon mustard
Handful of chives
Smoked ground paprika, for sprinkling
Preheat your oven to 220°C. Line a baking tray with baking paper and apply oil spray before setting aside. Place the potatoes, olive oil, salt, pepper and oregano in a large bowl and toss to combine.
Arrange herbed potatoes on prepared baking sheet, spacing each one apart. Bake in oven until potatoes have become crispy (approximately 30 minutes). As the potatoes bake and cool, combine the goat’s cheese, mustard and three tablespoons of chopped chives in a small bowl, mixing well.
Rotate the baking tray after 15 minutes in the oven for even roasting. Once the potatoes are crispy, remove from oven and place a wire rack or parchment paper, sprinkle with sea salt and allow them to cool. Once cool, place on a serving board and spread about ½ teaspoon scoop of the goat’s cheese mixture on to each potato crisp.
Sprinkle each canapé with a dash of paprika and chopped chives before serving to your guests.
