Partake in Shrove Tuesday in style! Here’s an easy, colourful and fresh Pancake Day recipe you can try at home to add an extra flair to the occasion. It’s made using no added sugar either, so you can enjoy it completely, and go for seconds.
While this exotic recipe has been created with sophisticated taste buds in mind, we’re sure little ones will be keen to a have a taste too.
INGREDIENTS (MAKES FOUR PANCAKES)
- 1 pomegranate
- 1 orange
- 1 tablespoon flaxseed
- 2 tablespoons Greek yoghurt
- 1 sprig fresh mint
- Ground cinnamon, to serve
- Honey, to serve
Remove seeds from pomegranate and finely dice a few mint leaves. Place in mixing bowl.
Grate one sixth of the orange peel and set aside, then peel and dice the orange in small cubes. The sharper the knife, the easier this will be.
In the mixing bowl, combine the pomegranate, diced orange, finely chopped mint leaves and cinnamon. Once combined, generously spoon the mixture onto a pancake stack. Use at least one tablespoon per pancake.
Top with a dollop of thickened Greek yoghurt, a sprinkling of flaxseed, the orange rind, and a sprig of mint to garnish. To sweeten, drizzle with honey. Serve immediately to enjoy a fancy Pancake Day treat!
